Christmas Jello Ring
This is my mother's favorite receipe. It's the first to go on a buffet supper.
1 8-ounce package cream cheese
1/4 cup chopped walnuts

1 3-ounce package lime-flavored gelatin
2 cups boiling water
2 1/2 cups cold water
1/2 cup chopped celery
1 envelope unflavored gelatin
1 6-ounce can frozen lemonade concentrate, thawed
1/4 cup sugar
1 cup mayonnaise or salad dressing
1 16-ounce can fruit cocktail
1 3-ounce package cherry-flavored gelatin
1/2 cup whipping cream
Form cream cheese into balls. Roll in walnuts: set cream cheese balls aside.
Dissolve lime-flavored gelatin in 1 cup of the boiling water, stir in 1 cup of the cold water and the celery. 
Chill the lime mixture until it is partially set. (consistancy of unbeaten egg white) Pour a little of the lime mixture into 8 1/2 -ounce fluted tube pan or 9-1/2 cup ring mold; chill until almost set. 
Carefully arrange cheese balls in partially set, lime jello. Pour remaining lime gelatin over cheese balls, being careful not to disturb arrangement; chill until it is just firm. 
Soften unflavored gelatin in 1/2 cup of the cold water, stir over low heat until the gelatin is dissolved. Add 1/2 cup lemonade concentrate, the sugar, and the remaining 1 cup cold water. Add 1/2 cup mayonanaise. Chill until second layer is partially set. Carefully pour over lime layer. Chill again until it is almost firm. Drain fruit cocktail, reserve syrup. Add enough water to syrup to make 1 cup boiling water; stir remaining syrup mixture. 
Chill until partially set. Fold in fruit cocktail; carefully pour over lemonade layer. Chill until firm. Unmold. Combine remaining mayonnaise and remaining lemon concentrate. Whip cream to soften peaks; fold into mayonnaise mixture.
Serve with salad. Makes 12 to 14 servings~
